The Exchange 1874 — Farm-to-Fork Dining in Woodbridge

Fine Dining

The Exchange 1874 began welcoming guests on February 18, 2024. This farm-to-fork restaurant celebrates seasonal, local, and regional ingredients while showcasing the broad range of American cuisine. Our menus follow the region’s harvest calendar, with three seasonal menus rotating annually.

The Story Behind The Exchange 1874

The Exchange 1874 takes its inspiration from local stories about a distinctive restaurant known as "The Bank Exchange." Established in the late 1800s, The Bank Exchange soon became a notable meeting place for farmers, ranchers, and traders throughout the Central Valley. It stood in San Joaquin County, an area recognized for agriculture and for its role in regional commerce.

At The Bank Exchange, agricultural producers could settle their dining bills with goods rather than cash. Fresh produce, meat, poultry, dairy products, and other farm items were accepted as payment, then incorporated into the restaurant’s meals or sold to fellow guests.

The Exchange 1874 honors the Central Valley’s agricultural significance and seeks to represent that heritage through meaningful relationships with the farming community.

Seasonal Ingredients and Menu Transparency

Every dish is made with seasonal, local, and regional ingredients. We believe the ingredients matter, and we value openness about what appears on our menus. Guests can learn where those ingredients originate: from our neighboring farmers and friends.

Ghost Lounge

From Wednesday - Saturday, The Exchange's Ghost Lounge welcomes guests from 6:30 PM to 9:30 PM for an unforgettable combination of live jazz and dishes prepared with fresh local ingredients.
